Embracing Tradition

It's Chinese New Year!! A time of tradition, visiting, feasting and gambling!!
Speaking of tradition, here's what Mum cooked when the gang came over to 'bai nian'!

Gyoza for starters. Beautiful, ay? The brown crispy side with the succulent meat inside.
Dip it in some vinegar with ginger and chilli padi soy sauce and hmmmmm so good!

And the main... drumroll please. We're hardly dramatic. This dish needs a drumroll!

"WHAT IS THAT?!" you might exclaim. Well, we have it on the first day of every Chinese New Year!
So here's introducing the 'Red Gravy Chicken' in direct translation from its hokkien name. Cook the gravy with chicken, eggs and ginger. Serve it with mee-suah and TA DA, a strange looking meal appears!

Not too sure if anyone somewhere out there, would wanna get their hands dirty on this one.
Do holler if you decide to get adventurous! :D

More on CNY the next time!

Melt Away

An enduring love for sausages, bread and cheese calls for this recipe;
the Cheesy Sausage Melt!

Rach adores sausages to the nine elevens. I wil chase bread to the ends of their world.
We both dance to cheese in any food. So VOILA!

Stuffing the sausage buns

It came out of the oven looking like this!

We added sauteed mushrooms (the usual favourite) and cool cucumber bacon salad to complement the cheesy sausage melt. This was great! Though honestly, a breakfast without egg is hardly complete.

So have your way, eggs or no eggs!

Gluttons are We

As we are all gluttons at heart and when gluttons unite, there will be an endless coming of food and more food! We returned to the kitchen for yet again another adventure just hours after breakfast.
*Please do not gasp*

All lined up

Fry, fry, fry

Layering the rice, hot dog mixture and cheese

Into the oven it goes!

We thoroughly enjoyed this one! It was bubbling and sizzling with cheese when we took it out.
The cheese was sticky, chewy and sooo gooood! To us, it's always the more cheese the merrier!!
No amount of cheese is too wrong for us!

This was my brother's (the little chef at home) recipe, thus the name :)
You can actually change the ingredients according to your preferance!
Knock yourself out!

The Breakfast of a New Year

Beginning the year with dear ones and a great breakfast created a warm tingling in our hearts we wished we could save it in a jar and use it for rainy days.

Here's what we were up to...

Pan-fried black pepper ham

Sauteed mushrooms yet again

Glorious glorious cheese baked bread

And our weak attempt at toad in a hole

It was difficult to get the egg cooked. The bottom of the bread was charring even before the egg coagulated.
Set on a rescue mission, we slipped the 'toad in a hole's out of the pan and into the oven on a baking tray.
They turned out better, though still missing the mark!

It is always fun to try something new, though it didn't turn out the way we expected.
Don't you agree? If you do, here's toad in a hole for you!

Toad in a hole
Serves 1

1 slice of bread
1 egg
butter

1. Preheat oven to 175 degree celsius.
2.Cut a 50 cent hole in the middle of the bread.
3. Butter up both sides of the bread.
4. Crack an egg into the hole of the bread.
5. Season with salt and pepper.
6. Place bread on aluminium foil/ baking tray and bake for 7-10 minutes or until you see the eggs setting.
7. Serve and enjoy immediately!

Happy New Year!

The Great Banana Bread

There are many versions of the banana bread which is really banana cake shaped like a loaf.
We thought banana bread with some coffee in the breezy afternoon would do us some good.

Our first attempt at banana bread looked like this.
Please stay even after you've seen this.

We used too much flour and had too little bananas in the mixture. Not to mention, our electric whisk broke down in the midst of whisking! Horrified, we scrambled around for an alternative. The result was a certain pair of muscular arms and the metal whisk part from the electric whisk. Boohoo to blisters :(

Well, now this is our second attempt!! Cheers to not giving up!

It was moist, nutty and sat well with milk in our now bloated stomachs. Wait for the but. We always have one. But it didn't have enough bananas. Maybe just one more banana would do the trick. More banana would make the bread a little sweeter and richer with its flavour.

Introducing the actors of this play:

We mashed and microwaved the bananas for it to be moist and soft.
Then, mix all the wet ingredients together.

It smelled great at this point! So tempted to lick up the bowl but restrained.
Stirred in the flour and walnuts.

Pour batter into baking tin. Had a little design on top! All ready to pop!

That was fun and pretty manageable!! :)

Here, have a go!

Banana Bread
Serves six

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. Mash bananas and microwave them for 30 seconds.
3. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
4.Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
5. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Cover top with aluminium foil if it seems to be browning too quickly. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Have fun and go bananas!
